- 2 cups grated zucchini from People Food Community Farm (squeezed dry)
- 2 cups all-purpose flour

- 2 large eggs
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 tsp cinnamon
Instructions:
Preheat oven to 350°F (175°C). Grease and flour a loaf pan. In a large bowl, whisk together flour, sugar, baking soda, baking powder, salt, and cinnamon. In another bowl, whisk oil and eggs.
